AZEITAO CHEESE DOP IS AN AWARDED CHEESE. IT FAIRS THE DOP (NAME OF PROTECTED ORIGIN) AS A GENUINE PRODUCT OF OUR REGION, WHICH QUALITY AND CHARACTERISTICS ARE UNIQUE. Azeitão DOP cheese is obtained from raw sheep's milk. It is a cured cheese, semi-soft and buttery, white or slightly yellow in color. It has a spicy flavor and is both acidified and salty. Its organoleptic characteristics are due, on the one hand, to the region's edaphoclimatic conditions, which influence the quality of the pastures, but on the other, due to the use of a spontaneous thistle flower variety (Cynara Cardunculus L.), as a coagulant.
