For many it is the best buttered cheese in the world. It is produced manually, without additives, using only raw sheep’s milk, salt and thistle. And there is the interesting story of a former lawyer, Joana, fed up with the laws, decided to drop everything to produce cheese by handmade. It won a gold medal at the World Cheese Awards 2019 in Bergamo. The quality of the production process and the curing alone guarantee a pure cheese of 70g each with a unique texture and flavor.
